Summary:
(Specialties: Spring Roll & Bento, Wok Cooking, Grill, Dim Sum, or)
We are seeking a dedicated and detail-oriented Chef to join our fast-paced kitchen team. Whether you are stationed at the wok, the grill, or the bento assembly line, you will be the backbone of our culinary operations. This role requires a strong foundation in food preparation, a commitment to safety and sanitation, and the ability to work seamlessly with a team to deliver high-quality dishes consistently.

Responsibilities:
  • Food Preparation & Assembly: Wash, cut, and prepare fresh ingredients daily. Execute cooking, plating, and assembly according to specific station requirements (e.g., spring rolls, bento boxes, wok dishes, or beef rolls).
  • Recipe & Portion Control: Strictly follow standardized recipes to ensure consistent taste, quality, and portion sizes for every order.
  • Quality Assurance: Monitor the quality of all ingredients and finished products, ensuring food presentation meets company standards before it reaches the customer.
  • Food Safety & Sanitation: Maintain strict adherence to all health department regulations, food safety guidelines, and proper temperature controls.
  • Kitchen Cleanliness: Keep workstations, cutting boards, and kitchen equipment sanitized and organized throughout the shift. Assist with end-of-day cleaning and dishwashing as needed.
  • Inventory & Waste Control: Monitor ingredient levels, rotate stock properly (FIFO), and actively minimize food waste.
  • Equipment Operation: Safely operate and maintain kitchen equipment (woks, grills, fryers, knives) specific to your assigned station.

Qualifications:
  • Education: High school diploma, GED, or equivalent is required.
  • Culinary Experience & Education: Prior experience in food preparation, basic cooking, or commercial kitchen operations is preferred. Formal culinary school education or training may be accepted in lieu of professional kitchen experience.
  • Bilingual: in English/Chinese or English/Spanish is a plus.
  • Mandatory Certification: A valid Food Preparation Certificate / Food Handler Certificate is strictly required prior to starting.
  • Culinary Experience: Prior experience in food preparation, basic cooking, or commercial kitchen operations.
  • Knife Skills: Strong, safe, and efficient knife skills for daily ingredient prep.
  • Pace & Adaptability: Proven ability to multitask and maintain high performance in a high-volume, fast-paced environment.
  • Attention to Detail: A keen eye for portion accuracy, food quality, and visual presentation.
  • Teamwork: Excellent communication skills and a collaborative attitude to support fellow kitchen staff during rush hours.
  • Reliability: Punctual, dependable, and capable of following instructions closely.
  • Quality & Consistency: Maintaining impeccable standards for the taste, texture, and visual appeal of all sushi produced.
  • Speed & Efficiency: Meeting production timelines and keeping the sushi case well-stocked without sacrificing quality.
  • Waste Control: Maximizing the yield of fish and keeping food waste to a minimum through careful prep and portioning.
  • Sanitation: Passing all internal and external health inspections with perfect marks for the raw fish station.
  • Attendance & Team Fit: Consistent punctuality, reliability, and a positive contribution to the team.
  • Strong communication and interpersonal skills.
  • Must be legally authorized to work in the United States without sponsorship.

Physical Requirements:
  • This job requires the ability to perform the following essential functions:
    • Must be able to lift, carry, and move items weighing up to 50 pounds.

Working Conditions:
  • This job is performed in a production environment that may have exposure to heat, noise, and other environmental factors associated with food production.

Position Details:
  • Employment Type: Full-Time & Part-Time.

    • Other nearby 99 Ranch locations.
  • Schedules:
    • Standard Shifts: 8:00 AM to 3:00 PM.
    • 2nd Shift: 12:00 PM to 8:00 PM.
