Summary:
We are seeking a highly skilled and precise Sushi Chef to lead our sushi production. In this role, you will be responsible for crafting high-quality sushi, sashimi, and related dishes while maintaining the highest standards of food safety and presentation. Handling delicate ingredients requires precision, excellent knife skills, and a deep understanding of raw fish preparation.

Responsibilities:
  • Sushi Production: Expertly prepare a variety of sushi rolls, nigiri, sashimi, and other specialty sushi items according to company standards.
  • Ingredient Preparation: Properly butcher, cure, and slice raw fish and seafood. Prepare sushi rice, vegetables, and garnishes daily.
  • Recipe & Portion Control: Strictly follow standardized recipes to ensure consistent taste, quality, and precise portion sizes for every order.
  • Quality Assurance & Presentation: Ensure every plate meets high visual and culinary standards before it is served or packaged.
  • Food Safety & Sanitation: Maintain strict adherence to all health department regulations, especially concerning the safe handling, temperature control, and storage of raw seafood.
  • Kitchen Cleanliness: Keep the sushi station, cutting boards, knives, and display cases impeccably clean and sanitized throughout the shift.
  • Inventory & Waste Control: Monitor seafood and ingredient inventory, practice proper stock rotation (FIFO), and actively minimize the waste of high-value ingredients.

Qualifications:
  • Education: High school diploma, GED, or equivalent is required.
  • Experience: Proven experience in sushi production is strictly required. Specialty sushi experience is highly preferred and qualifies for the top tier of the pay range. Formal culinary school education with a focus on Japanese cuisine/sushi may be accepted in lieu of professional experience.
  • Mandatory Certification: A valid Food Preparation Certificate / Food Handler Certificate is strictly required prior to starting.
  • Advanced Knife Skills: Exceptional, safe, and precise knife skills specific to handling and slicing raw fish.
  • Pace & Adaptability: Proven ability to maintain high quality and precision in a high-volume, fast-paced environment.
  • Attention to Detail: A keen eye for portion accuracy, food quality, and beautiful visual presentation.
  • Teamwork: Excellent communication skills and a collaborative attitude to work smoothly with prep assistants and front-of-house staff.
  • Quality & Consistency: Maintaining impeccable standards for the taste, texture, and visual appeal of all sushi produced.
  • Speed & Efficiency: Meeting production timelines and keeping the sushi case well-stocked without sacrificing quality.
  • Waste Control: Maximizing the yield of fish and keeping food waste to a minimum through careful prep and portioning.
  • Sanitation: Passing all internal and external health inspections with perfect marks for the raw fish station.
  • Attendance & Team Fit: Consistent punctuality, reliability, and a positive contribution to the team.
  • Strong communication and interpersonal skills.
  • Must be legally authorized to work in the United States without sponsorship.

Physical Requirements:
  • This job requires the ability to perform the following essential functions: 
    • Must be able to lift, carry, and move items weighing up to 50 pounds. 

Working Conditions: 
  • This job is performed in a production environment that may have exposure to heat, noise, and other environmental factors associated with food production.

Position Details: 
  • Employment Type: Full-Time & Part-Time.
  • Facility Location: 
    • 2959 Chino Ave.Chino Hills, CA 91709.
    • Other nearby 99 Ranch locations.
  • Schedules:
    • Standard Shifts: 8:00 AM to 3:00 PM.
    • 2nd Shift: 12:00 PM to 8:00 PM.
