Summary:
We are seeking a detail-oriented and eager-to-learn Kitchen Assistant to support our Sushi Chefs. In this role, you will be the crucial support system for the sushi station, responsible for preparing sushi rice, slicing vegetables, organizing ingredients, and maintaining a pristine workspace. This is an excellent opportunity for individuals looking to gain specialized experience in a professional sushi kitchen.  

Responsibilities:
  • Sushi Ingredient Preparation: Wash, peel, and precisely cut vegetables (such as cucumbers, avocados, and carrots) and prepare garnishes for sushi rolls and platters.
  • Rice Preparation: Cook, season, and handle sushi rice according to exact company recipes and temperature guidelines.
  • Chef Support: Assist the lead Sushi Chefs during busy service hours by fetching ingredients, restocking the sushi case, and handling basic assembly tasks as directed.
  • Food Portioning: Accurately weigh and portion out ingredients to ensure consistency and cost control.
  • Kitchen Cleaning & Dishwashing: Keep the sushi prep tables, cutting boards, rice cookers, and utensils meticulously clean and sanitized throughout the shift.
  • Food Safety & Sanitation: Strictly follow all health department regulations, paying special attention to the cross-contamination rules and temperature controls required in a raw seafood environment.
  • Inventory & Waste Control: Assist with receiving seafood and produce deliveries, practice proper stock rotation (FIFO), and actively minimize food waste.

Qualifications:
  • Education: High school diploma, GED, or equivalent is required.
  • Experience: Kitchen or food preparation experience is preferred but not required (entry-level candidates eager to learn are welcome). Formal culinary school education or training may be accepted in lieu of professional kitchen experience.
  • Mandatory Certification: A valid Food Preparation Certificate / Food Handler Certificate is strictly required prior to starting.
  • Knife Skills: Basic knife skills with a strong willingness to learn and improve safe, precise cutting techniques.
  • Pace & Adaptability: Ability to stay organized, work efficiently, and remain calm in a fast-paced, high-volume environment.
  • Cleanliness & Organization: A strict commitment to maintaining a neat, highly sanitary workspace.
  • Teamwork & Reliability: Excellent attendance, a positive attitude, and the ability to follow instructions closely from the head Sushi Chefs.
  • Preparation Accuracy: Cutting vegetables and preparing rice exactly to recipe specifications.
  • Work Efficiency: Completing daily prep lists on time so the Sushi Chefs are fully stocked for service.
  • Sanitation & Cleanliness: Maintaining a spotless and safe workspace, passing all internal and external health inspections.
  • Waste Control: Minimizing food waste through careful peeling, cutting, and storage.
  • Team Fit: Demonstrating reliability, punctuality, and a readiness to support the team.
  • Strong communication and interpersonal skills.
  • Must be legally authorized to work in the United States without sponsorship.

Physical Requirements:
  • This job requires the ability to perform the following essential functions: 
    • Must be able to lift, carry, and move items weighing up to 50 pounds. 

Working Conditions: 
  • This job is performed in a production environment that may have exposure to heat, noise, and other environmental factors associated with food production.

Position Details: 
  • Employment Type: Full-Time & Part-Time.

    • 2959 Chino Ave.Chino Hills, CA 91709.
    • Other nearby 99 Ranch locations.
  • Schedules:
    • Standard Shifts: 8:00 AM to 3:00 PM.
    • 2nd Shift: 12:00 PM to 8:00 PM.
